		<description>Kim - My go-to recipe for a crowd (in the winter) is my Spinach Lasagne. You can prep it ahead (or the day before) and then pop it in the refrigerator. It&#039;s tasty and healthy and feeds a lot! I serve it with a lemony caesar side salad. I hope you enjoy it!

I included the sauce recipe below as well, but you can use store-bought sauce if you prefer.

2 c. grated mozzarella
1/2 c. parmesan (sometimes I use Romano for it&#039;s sharp taste)
10-12 lasagne noodles, cooked according to directions (can use no-boil)

Sauce:
2 T butter
1 c. chopped onion
2 c. mushrooms
2 7 1/2 oz. tomato sauce
1 5/12 oz. tomato paste
1 t. oregano
1 t. salt
1 t. granulated sugar 1/4 t. basil

Melt butter in pan and add onion. Cook until soft and clear. Add mushrooms, saute 3-5 minutes. Add next 6 ingredients. Stir, simmer uncovered 10-15 min.

Spinach Layer:
2 c. cottage cheese
1 egg
dash of salt, pepper, nutmeg
10 oz. chopped, thawed (thoroughly drained) spinach

Combine all in bowl.

To assemble: Layer in greased 9x13 pan
1. noodles
2. 1/2 sauce
3. 1/2 spinach layer
4. noodles
5. 1/2 spinach layer
6. 1/2 sauce
7. mozzarella
8. parmesan

Cover with greased foil. Bake at 350 degrees for 50-60 min. Let stand 10 min. before serving.

Lemony Caesar Salad:
1/2 c. olive oil
3 T. lemon juice (fresh squeezed is best)
2 garlic cloves, minced
1 t. dijon mustard
1/2 t. salt
1/8 t. pepper

Whisk together and toss with lettuce greens, parmesan (or Romano) and salad croutons.</description>
